Uncle Wally’s Smart Portion Muffins

I recently stumbled on a brand of muffins I haven’t seen before. There was a huge display of boxes of Uncle Wally’s Smart Portion Muffins. I saw the word “portion” and of course was immediately intrigued. I checked them out.

Each box contains 6 muffins, but there are 2 muffins per serving. 140 calories, 1 gram of fat and 3 grams of fiber. SOLD! Now, I was uneasy since I have not had a great low fat muffin experience in the past but again, for the sake of the Donut and my expanded waistline, I grabbed a box of their Whole Grain Blueberry and the Whole Grain Banana (which I accidentally stole because it was in the bottom of my stroller and I didn’t see it when I checked out. Oops).

Come breakfast time I excitedly sat down with my coffee and my 2 muffins (which are wrapped together for easy travel) and dug in. I was amazingly surprised at how GOOD these were. They didn’t have the usual fat free muffin slime I am accustomed to, they were fresh and fluffy, but not overly fluffy. They had a good density to them, like real muffins. I particularly enjoyed the oats sprinkled on top for a little something extra. And the best part was, they were filling. The higher fiber content held me over well past lunch, and I didn’t feel like I ate a cinder block.

Again, for both muffins, 140 calories, 1 gram of fat and 3 grams of fiber… 2 muffins, 2 POINTS. Can’t beat it. Perfect breakfast. The next morning I tried the banana flavor and had an equally good experience. I found these at my local Wal-Mart and will be returning to stock up!
